My Favourite Crackers
My mom makes these awesome seed crackers that I hide, so I don’t have to share them. Thank God men don’t look to the back of refrigerators or cupboards!!
Here is the recipe, I am not sure where she got it from so I am giving her full credit! Thanks Ma!!
Seed Crackers
Ingredients:
1/3 cup almond flour
1/3 cup sunflower seeds
1/3 cup pumpkin seeds
1/3 cup flaxseeds or chia
1/3 cups sesame seeds
1 tbsp ground psyllium husk powder
1 tsp salt
3 tbsp olive oil
1 cup boiling water
Directions:
Preheat oven to 300F
Mix all dry ingredients together in a food processor and add oil and boiling water
Keep working the dough until it forms a ball with a gel-like consistency.
Place the dough on a baking sheet lined with parchment with another piece on top, using a rolling pin flatten the dough evenly
Remove top sheet of parchment and bake on the lower rack for 60 mins, check occasionally to make sure you aren’t scorching your crackers!
After 60 mins turn off the oven, DO NOT open the door or take your crackers out, let them dry and cool in the oven, for several hours.
Once totally cool break apart and store in a glass jar.
These crackers are packed with a ton of nutrients, fibre, all of the B Vitamins, Magnesium, essential fatty acids just to name a few.
***** Most people don’t have psyllium husk powder, because I didn't, I just put the psyllium husks I did have in my herb grinder (formally known as the coffee grinder) and made my own psyllium husk powder. Works just as good and no need to have an extra thing in the pantry!
Enjoy these crackers for
breakfast with some almond butter and some fruit
At lunch with a bowl of Butternut Squash and Black Bean Soup, Roasted Cauliflower Soup or simple green salad.
