Lemony Arugula Couscous Salad

Following recipes is definitely not my MO so here are some loose instructions to make this quick salad

  1. Put dry whole wheat couscous in a pot with a pinch of salt and equal amount of boiling water, cover for 5 minutes

  2. In a medium sized bowl throw a handful of arugula in, and chopped vegetables you have, cucumbers, tomatoes, peppers, onion, carrot all work well, if you have leftover vegetables put them in to!

  3. Roughly chop any fresh herbs you have on hand (dill, parsley, cilantro work well) and add to the bowl

  4. Add olives (I half mine) and rough chopped artichoke hearts into the bowl

  5. Add the juice of a lemon to taste as well as salt and pepper

  6. Add cooked couscous and stir

  7. Enjoy
