Make it Delicious, Make it Your Own Bowl a Non Recipe Recipe

OK here is another non recipe/idea for dinner or lunch as requested by my Mom

I usually make some sort of grain on the weekend and have leftovers throughout the week.

As Mom says cook once eat several times! Make more than you need so you can build these fantastic bowls throughout the week.

My favourites are quinoa and brown rice, these grains are high on nutrients and can be eaten in many different meals, breakfast included.

I use this as my base and then add in whatever I have in the fridge, leftovers, raw vegetables, tempeh, tofu beans whatever you like. So here’s how to build your bowl:

  1. In a good size soup bowl throw in some mixed greens, like prefer arugula but use what you have

  2. Warm your grains and any leftover roasted vegetables and add into your bowl

  3. Add protein if using, can be tofu, tempeh, an egg etc

  4. Add in raw vegetables on top cucumbers, shuddered carrot, cabbage, beet, celery peppers

  5. Top it off with the homemade dressing of your choice. I use the zest of one lemon, the juice of that lemon and a good quality olive oil, this lasts me the entire week in a jar in the fridge.

There are no rules here play with it, I sometimes go with themes like if I feel like Mexican (its usually all the time!!) I will do black beans, peppers, shredded carrot, cabbage with a zippy chipotle dressing. Another option is a curry with chickpeas and cauliflower or you can do flavours of Italy. Anything goes and you may make something that just didn’t turn out and that’s ok, thats how you learn!!
