Easy Adaptable Muffin

I know there are times where we are running out the door and have no time for breakfast or you need a quick snack. Take a few minutes and make these delicious muffins to have on hand. It is a simple recipe, without refined sugar, sweetened with coconut sugar and bananas and high in fibre. You can add any fruit you have on hand and make it your own. Enjoy.

Christmas Treats That Are Good For You

For me, Christmas is all about tradition, family and childhood nostalgia. I really enjoy this time of year when I get to relive some of my most favourite memories as an adult. Christmas is also when I allow myself to indulge in the foods that I don’t normally eat but still enjoy! Eating really well 95% of the time allows me to indulge a bit now and again without too much consequence.

To keep holiday weight gain to a minimum and gastrointestinal issues at bay, see my previous blog for helpful tips to follow throughout Christmas. But, here are a few goodies you can add to your mix that aren’t as rich or sweet but still just as good.

A Quick and Easy Savoury Breakfast

Here’s the ingredients:

  • Vegetable broth (a tiny bit)

  • Bell pepper, onion

  • Extra firm tofu (squeeze the water out as much as you can)

  • Any spice you want: curry, oregano, garlic, nutritional yeast etc

  • A big handful of greens: can be arugula, spinach, kale

1.) In a large skillet on medium heat, add a in a bit of vegetable broth, not much, this is for taste.

2.) Chop some onion, and bell peppers, feel free to add in anything else you want or is in the fridge. This is a good time to use up any scrapes you may have kicking around your fridge.

3.) Sauté your veggies for 10 mins add in your tofu and break it up with a wooden spoon so it has the consistency of scrambled eggs.

4.) Add in your spices and a big handful of your greens

5.) Enjoy!!

Sarah's Homemade Granola

My Mom said to me last weekend that she was hoping for a recipe in my last blog. I groaned and said ya I know, but I am not much of a recipe follower. When I cook I usually just throw things together and hope for the best, most of the time it does work out in my favour. So, the recipe I am about to share is more instructional rather than a recipe to follow verbatim. It is crazy what the stores are selling for some oats in the store for!! Why not make your own!! We have the time and it can occupy the kids for a bit!!
