Fantastic Fall Pumpkin Millionaires Bar
I have a sweet tooth so I am always on the look out for healthy and delicious sweets. I have a recipe that will satisfy your sweet tooth but not compromise your health, in fact it is pretty healthy!
Now that it is fall, we must put pumpkin into everything! And why would Millionaires Bars be any different?
I won’t ramble on and on about what’s in them but know they contain no refined sugar or flour and are packed with fibre, protein, vitamins, minerals and healthy fat…but not too much!
Original Millionaires Bars:
Crust:
1.25c (155g) Almond Meal
0.5c (55g) Coconut Flour
0.5c (90g) Melted coconut oil
2 tbsp (20g) Maple syrup
Filling:
1c heaping (200g) pitted dates
0.25c (70g) Almond Butter
3 tbsp (30g) Maple Syrup
A splash of almond milk
A splash of vanilla
Chocolate Glaze:
0.75 c (100g) Dark Chocolate
A splash of almond milk
Method:
Prep a 9x5 pan with a bit of coconut oil
Combine crust ingredients and press firmly into pan, set aside
In a food processor combine all filling ingredients and process until very smooth adding almond milk to get a caramel consistency.
Dump on top of prepared crust and with a spatula spread filling to sides of pan. Tip: run the spatula through some water and shake off excess to make spreading the filling easier.
Melt chocolate and almond milk and add to top of filling, smooth out
Chill in fridge until chocolate sets.
For the fall pumpkin version:
Same recipe but substitute about 1/3c (50g) of the dates for pumpkin and add in as much pumpkin spices as you want. I add in a lot of cinnamon (because we love cinnamon in our house), a wee bit of ginger, nutmeg and allspice. Taste and adjust for your preferences.
