Super Easy Cauliflower Soup
Cauliflower Soup
Ok nothing says autumn like a delicious soup and this roasted cauliflower soup is a favourite in our house. It can double as side dish or you can pair it with homemade bread or even better a simple salad of mixed greens. This is an easy soup that takes no time! The amounts of the ingredients are all estimates as I hate measuring and I think soup definitely needs to be a creative endeavour, it’s hard to screw up soup!
Here’s what you will need:
1/2 an Onion
2-4 cloves Garlic
1-3 ribs Celery
1-2 Carrots
A couple of bay leaves
Big head of cauliflower
4 cups Vegetable stock
1 can Coconut milk
Method: Preheat oven to 375F
Rough chop cauliflower, toss in olive oil and roast for about 25-30 mins or until cooked through
In a big soup pot heat some olive oil and cook onion, garlic celery and carrots until soft.
Add your stock, bay leaves, roasted cauliflower and coconut milk (to taste)
If you prefer a creamy texture transfer to a blender and blend until smooth, or leave it chunky!
Heat and enjoy
Tips:
I like to hold back some roasted cauliflower to add to each bowl
You can adjust the amount of coconut milk to keep it lower in fat.
Be creative with the herbs you use, whatever you have on hand will work
For all the vegans out there, nutritional yeast is a nice flavour with this dish

High in potassium, folic acid
High in Vitamin C (85% of your intake in just 1 cup)
Has about 25% protein
Is among the cancer-preventive cruciferous vegetables
High in fibre
