Get Stuffed Sweet Potatoes

This is a very versatile recipe you can use whatever bean or legume you have on hand and any of your favourite spices! This is just a guideline, be creative and enjoy!!

Black Bean Stuffed Sweet Potato

Ingredients: For 1 serving

  • 1 Sweet Potato or /Yam (medium size)

  • 3/4 tsp Vegetable Broth

  • 1/4 Yellow Onion (chopped)

  • 1/4 Yellow Bell Pepper (chopped)

  • 1/2 Garlic (clove, minced)

  • 1 1/8 tsps Chili Powder

  • 1/4 tsp Oregano

  • 1/8 tsp Cumin

  • 1/2 cup Black Beans (cooked, drained, rinsed)

  • 1 1/3 tbsps Water

  • 1 tbsp Cilantro (chopped)

Method:

Preheat the oven to 400ºF (204ºC) and line a baking sheet with parchment paper. Cut the sweet potatoes in half and place cut side down on the baking sheet. Bake for 45 to 50 minutes until cooked through.

  1. While the potatoes cook, in a medium-sized pan over medium heat, add the vegetable broth. Add the onion and bell pepper and sauté for 5 to 7 minutes, or until cooked through. Add the garlic and cook for 1 minute more. Then add the chili powder, oregano and cumin. Stir to combine. Reduce the heat to low, and add the black beans, and water and cook for 6 to 8 minutes.

  2. Remove the sweet potatoes from the oven. Stuff with the black beans, and top with cilantro. Serve and enjoy!

This meal is packed with fibre, Vitamin A, Iron, Protein, Magnesium, Folic Acid and Potassium.

It makes a nice full meal or you can pair it with a nice salad of leafy greens. Add your own toppings like avocado, non dairy Yogurt or Nutritional Yeast!
