Smashed Chickpea Sandwich
Ok guys I hate following recipes, as you know so here is an idea for a fantastic sandwich, that is a good alternative to a meat sandwich.
*** Day before prep: If using dried beans (preferred) soak overnight and cook normally
Use a whole grain bread, anything that is not white, preferably organic, even better if its homemade!
Take your cooked chickpeas (or canned if using) and smash them up really well in a bowl using a fork or a potato masher
Add in avocado, a wee bit of organic mayo, djion mustard, celery, dill pickle, fresh herbs, onion, anything you want, be creative there is no wrong way of doing this!
Make a sandwich with as many vegetables you have on had! If you are on the ball you will have some homemade micro-greens, you can use leftover roasted veggies, lettuce, tomato, peppers whatever you want. Just try to avoid cheese!
This alternative is high in fibre, the B vitamins, magnesium, health fats, protein and is a complex carbohydrate that will maintain even energy levels.
