What You Eat Literally becomes You

There is a bit of a disconnect with what we eat and its impact on our health. I was recently on the ferry and a young couple was sitting behind me. I couldn’t help but notice the frequency of their trips to the vending machine for snacks. Don’t get me wrong I am far from a perfect eater but as far as I am concerned there is no food in those machines. There are food stuffs, but no actual nutrients.

At a time of the Covid virus it is SO important that we are mindful that we are eating to support our bodies, not put it at risk for infection and disease.

  • Did you know that after you consume sugar your immune system is compromised for 4 hours? That means you are at great risk of getting sick!!

Eating a diet that is varied including whole foods like fresh fruits, vegetables, whole grains, nuts, seeds and some good quality fats is ideal.

A fantastic idea for a well rounded dinner can be a Stuffed Yam with Black Beans:

As you know, I don’t follow recipes but here is an idea for you:

Day before prep: soak your beans if using dried.

  • Roast a whole yam and when cooked slice it down the middle but not completely through, you are making a bit of a bowl.

  • Cook your black beans as normal and once cooked and drained add in onion and garlic, feel free to mash a bit of the black beans to make them a healthy version of refried beans.

  • Add in anything else you want on top. Add a bit of heat in the form of chilis if you can tolerate it, avocado, tomatoes, bell pepper, cilantro, any thing you want, be creative!

  • Enjoy! This meal is high in complex carbohydrates, fibre, beta-carotene, vitamin C and many of the B vitamins, there is iron, protein, essential fatty acids, potassium, folic acid, magnesium and calcium in this meal. This meal will give your body the building blocks it needs to build healthy cells, tissues and organs, as well as keep your immuntity strong.
