A very delicious sandwich, high in fibre, vitamins and nutrients. A staunch meat eater gave this sandwich his approval, so it must be good! Give it a go, it’s an easy to throw together meal!

There is a bit of a disconnect with what we eat and its impact on our health. I was recently on the ferry and a young couple was sitting behind me. I couldn’t help but notice the frequency of their trips to the vending machine for snacks. Don’t get me wrong I am far from a perfect eater but as far as I am concerned there is no food in those machines. There are food stuffs, but no actual nutrients.
I am spending more time on social media lately because I have more time being socially isolated. I am finding many people are expressing more anxiety, fear and sadness because of upset in routine, isolation from loved ones, loss of employment and an overall fear of the unknown. This is a normal response, I am truly sorry some of you are experiencing these feelings and I want to help.
My Mom said to me last weekend that she was hoping for a recipe in my last blog. I groaned and said ya I know, but I am not much of a recipe follower. When I cook I usually just throw things together and hope for the best, most of the time it does work out in my favour. So, the recipe I am about to share is more instructional rather than a recipe to follow verbatim. It is crazy what the stores are selling for some oats in the store for!! Why not make your own!! We have the time and it can occupy the kids for a bit!!
Those of us who are doing our part and self isolating in attempt to plank the curve of this Covid-19 virus may be going a bit stir crazy. I think this is the perfect time, when our lives have slowed, way down, to get our butts in the kitchen. This is a fantastic opportunity to get creative, to try new dishes, flavours, and/or new ingredients. We have been given this gift of time and space to actually cook, rather than just stuff food in our faces while on the run, going about our daily lives.
This mighty little seed is considered a super food and for good reason. It is high in many of the B vitamins, fibre and omega 3. Chia seeds also contains minerals including calcium, magnesium, manganese, iron, phosphorus and zinc, all of which are needed for a healthy body. The chia seed can absorb up to 12X its weight in liquid, creating a gelatinous texture. Which is perfect for replacing an egg in a recipe for any vegan friends you may have.
